Servings: 2 cups
Ingredients:
- 2 cups of water
- 1-inch piece of fresh ginger, peeled & thinly sliced or grated
- A handful of fresh mint leaves
- 1 medium lemon, juiced. Save the peels!
- 2 tablespoons of honey (or to taste)
- Optional: Lemon wedges and fresh mint springs, for garnish
5 Easy Steps:
- In a small saucepan, combine the water, ginger slices, mint, and lemon halves, saving the juice.
- Bring to a boil, then reduce the heat and let it simmer gently for 10–15 minutes to infuse the flavor.
- While the ginger water is simmering, add the lemon juice and honey to your serving mugs.
- Remove the saucepan from heat. Pour the hot ginger water through a strainer into the mugs, discarding the ginger pieces and lemon.
- Garnish with a lemon wedge and a mint spring, if desired.
